Slimming World Friendly Recipes

These are recipes that I've either adapted from existing Slimming World recipes or made up myself.

Even if you're not a Slimming World member, you can get more recipes here: Slimming World Public Website

The recipes on this page are all free on the Extra Easy plan as long as you use extra lean (5% or less fat) meat, and they have plenty of super-free veg in too :).

Smoked Paprika and Tomato Chicken


Quantities of spices etc. are approximate as I just sprinkled stuff in!

10 filleted chicken thighs, skin removed and cut into quarters
2 Carrots, washed, peeled and thinly sliced
1 medium onion, finely chopped
1 red pepper
400g passata
400g tin chopped tomatoes
8 - 10 cherry tomatoes, halved
2tbsp smoked paprika
3tbsp light soy sauce
1 concentrated chicken stock cube (or the Knorr "stock pots" work well)
150 - 200ml cola zero or diet cola (I used the Sainsbury's one that's 60p for a 2l bottle)
Frylight "Infuse" garlic oil (or use normal frylight and add 2 cloves garlic, crushed).
Sea salt to season

Spray a large frying pan with the Frylight Infuse (if using); heat over a medium-low (medium if not using infuse) heat then add the onions, carrots and pepper. Spray more of the infuse garlic oil onto the veg (or add the crushed garlic if using) and add the smoked paprika and 2tbsp soy sauce.

Stir fry for 6 - 8 minutes, then add the chicken thighs; spray the chicken with infuse (if using), add the last tablespoon of soy sauce, then stir fry for another 10 minutes or so to seal the chicken.

Add the passata, tomatoes, concentrated stock cube and cola, season with sea salt and stir well. Bring to the boil, then simmer for 30 - 40 minutes, stirring occasionally, until the carrots are soft and the chicken is cooked through.

Serve with pasta (or slimming world chips), sweetcorn and broccoli.

Beef Stew


4 -500g extra lean casserole beef, cut into bite size chunks
1 onion, finely chopped
3 - 4 small tomatoes, quartered (cherry would do - I used Vine Ripened tomatoes from Sainsbury's),
5 carrots, peeled & chopped into bite sized chunks
1 swede, peeled & chopped into bite sized chunks
1 500g carton passata
600 ml beef stock
2 cloves garlic, crushed
~2 Tbsp Paprika (I just sprinkled it in out of the jar so quantity may not be exact)!
1 1/2 tsp sweetener
Low calorie cooking spray

(Preheat the slow cooker if required - ours has an "auto" setting that it has to be left on for 20 minutes before cooking but I've no idea if that's a normal feature)

Spray a frying pan or wok with the low calorie cooking spray and heat over a medium heat; add the beef, garlic and onions and fry for 5 - 10 minutes, until the beef is browned

Put the swede and carrots into the slow cooker and add the stock. Transfer the beef, onions and garlic into the slow cooker and sprinkle the paprika and sweetener over the mixture; stir well to mix, then add the passata and tomatoes and stir again.

Leave the mixture in the slow cooker for 4 hours on high, then turn down to low for 30 minutes or so.

Serve with boiled potatoes and superfree veg (I use fine beans and broccoli).
